About the Recipe

Ingredients

  • 2 cups oats

  • 1 cup crispy rice cereal

  • 1 cup peanut butter

  • 1 cup ground flaxseed

  • 1 cup dairy free mini chocolate chips

  • 2/3 cup honey

  • 2 teaspoons pure vanilla extract

  • 2 tablespoons coconut oil


Preparation

Step 1


In a large bowl, combine all the ingredients. Mix the ingredients gently so the rice cereal doesn't get crushed. Continue stirring until the ingredients are well-combined.


Step 2


Take about 1 tablespoon (more or less) of the mixture and form a ball. Place the rounded portion onto a baking sheet lined with parchment or wax paper.


Step 3


Set the tray of granola minis in the refrigerator for 1-2 hours.
