About the Recipe

Ingredients
Coconut milk
Sugar
Vanilla extract
Optional: any mix-ins (chocolate chips, fruits, nuts, etc.)
Preparation
Step 1
Make coconut cream: Place a can of full-fat coconut milk in the fridge overnight. Then, open the can and pour the liquid contents into a separate container. Scoop the remaining hardened coconut cream out and place in a bowl.
Step 2
Make a sweetened condensed milk substitute: In a saucepan, over a simmering stovetop, whisk the coconut milk with 1/4 cup of sugar. Bring the mixture to just below boiling and then allow the mixture to simmer for 30 minutes. Stir the mixture often until it thickens. Then, allow the mixture to cool.
Step 3
Use a hand mixer / stand mixer to whip the coconut cream until stiff peaks form (hopefully they form...). Be careful not to over whip (hmm)
Step 4
In another large bowl, combine the vanilla extract with the coconut milk/sugar mixture. Using a spatula, gently fold the vanilla/coconut milk/sugar mixture into the coconut cream bowl. Slowly incorporate the two mixtures together so it stays light and aerated.
Step 5
For individual flavors: scoop the cream mixture into individual small bowls and gently fold in desired mix-ins. For making a single flavor: mix the ingredients directly into the cream mixture.
Step 6
Transfer the mixture(s) to insulated tubs or paper containers and freeze for 4-6 hours. Enjoy!
