About the Recipe

Ingredients
1 Whole Chicken
Seasoning:
2 teaspoons Salt
2 teaspoons Paprika
1 teaspoon Oregano
1 Clove of Garlic
Vegetable Sauce:
1 Onion
1 Green Pepper
1/2 Red Pepper
4-5 Cherry Tomatoes
2 tablespoons Vegetable Oil
Parsley
Vegetable Side:
4 Potatoes
2 Carrots
1 Zucchini
Preparation
Step 1
Wash the chicken. Remove the fat. Cut the chicken in half from the belly side, but leave the back still connected.
Step 2
Make the vegetable seasoning: Cut the vegetables in pieces. Puree the vegetable pieces with a blender.
Step 3
Mix the seasoning and rub the chicken with the mixture inside and out.
Step 4
Cover the chicken with half of (?) the vegetable sauce evenly.
Step 5
Cut the potato, carrot, and zucchini into pieces and mix them with half of the vegetable sauce.
Step 6
Place the vegetables on a baking sheet lined with parchment paper. Put the wire rack (with the chicken) on top. Cover up the chicken with what.
Step 7
Moist the parchment paper.
Step 8
Preheat the oven to 450 degrees F (230 degrees C).
Step 9
Roast/bake the chicken for 50 minutes.
Step 10
Take the chicken out of the oven. Brush a think layer of oil on the chicken and put the chicken back into the oven for a couple minutes to get a golden look and crispy skin.
Step 11
Place the chicken in a plate. Decorate with a bit of parsley. Serve and enjoy!
